The story of "JIFFY" began in 1930, when Mabel White Holmes of Chelsea, Michigan, created the first-ever prepared baking mix. Her goal was simple: to make baking easier and more accessible for everyone. Inspired by a friend of her sons whose lunch biscuit was flat and unappetizing, Mabel developed a mix that only required milk to produce perfect, fluffy biscuits every time.
Mabel named the baking mix "JIFFY", recalling a childhood memory of her family’s cook promising biscuits would be ready “in a 'JIFFY'.” That name—and the product—stuck. Backed by her husband Howard S. Holmes and rooted in the family’s Chelsea Milling Company, Mabel’s innovation revolutionized home baking and helped families during the Great Depression and during WWII.
Did you know the name "JIFFY" was inspired by a moment from Mabel’s youth? The phrase, once used in her family kitchen, became the foundation of a brand that would go on to become a pantry staple across America. And the rest is history!
Today, Chelsea Milling remains a family-owned business, now in its fifth generation, still based in Chelsea, Michigan, and continues to be guided by the same quality, values, and community care.

HISTORY BEHIND NATIONAL "JIFFY" MIX DAY
"JIFFY" Mix (Chelsea Milling Company) and National Day Calendar began working together during the summer of 2025 to create National "JIFFY" Mix Day. The National Day Calendar Registrar approved the day to be celebrated each year on October 1, beginning in 2025.

From One Box to Millions
While the original baking mix started it all, "JIFFY" has grown into a beloved American tradition with 14 retail products, including its best-selling Corn Muffin Mix. As the market share leader in retail prepared muffin mixes, the signature blue-and-white packaging evokes a comforting sense of nostalgia—reminding generations of home bakers of family meals, holiday gatherings, and the simple joy of baking. Its timeless design, affordability, and reliability have helped it remain a cherished staple in kitchens across the country for decades.
But "JIFFY" isn’t just for home bakers. In 2007, Chelsea Milling expanded into the foodservice market with the launch of ”JIFFY” Foodservice, offering complete, add-water-only baking mixes under the CMC brand to the non-commercial market.
Building on that success, the company expanded the line in 2018 with their "JIFFY" Brand—an elevated collection of complete, add-water-only baking mixes formulated to simplify prep, reduce waste, and deliver scratch-quality results.
