Although early forms of cheesecake date back to ancient Greece, cream cheese didn't enter American dessert recipes until around the 1820s. Following the advent of pasteurization, William A. Lawrence, a dairy farmer from Chester, New York, purchased a Neufchâtel factory and introduced the first mass-produced cream cheese in 1873.
